Meat and Tomato Stew

Ingredients

1 kg of sausage or stew meat cut into pieces

2-3 tablespoons of coconut oil

1 sliced carrot

A chopped onion

A piece of fresh ginger

2 garlic cloves pressed

One tablespoon of tomato concentrate juice and zest of an orange

A glass of white wine

750 ml chicken broth

Salt and pepper

3 tablespoons of chopped parsley

1 garlic clove finely chopped

Preparation

Heat a pan over medium-high heat, put the coconut oil, salt the meat, brown it and remove it. Lower the heat and add a little more oil to sauté the carrot, onion, and ginger for a few minutes. Then add the garlic and sauté until it releases its aroma. Add the concentrated tomato and mix everything. Put the meat in the slow cooker and add the sauce with the vegetables, the orange juice, and the wine. Pour 250 ml of chicken broth, salt, and pepper and cook for 11 hours. Reduce the sauce heat in order to get the desired texture.

Easy Baked Potatoes

Ingredients:potatoes in a slow cooker

potatoes

olive oil or butter

salt and pepper

parmesan cheese

Preparation
Pierce the potatoes with a fork many times, then rub potatoes with butter or olive oil, sprinkle with salt, pepper, and parmesan cheese and wrap tightly in foil. Put the potatoes in the slow cooker and cook covered on low for 7 hours or on high for 5 hours.
