How to conserve wine after opening the bottle?

First, let’s understand the change that takes place after the bottle of wine is opened. When the cork is removed, oxygen enters the bottle and makes contact with the wine. At this moment, the so-called “wine oxidation” process begins, which is nothing more than a chemical reaction, a transformation that causes the wine to lose its aroma, flavor, and quality.
How long does it take for the wine to break down completely once it has been opened?
It depends on the type of wine and its age. If the wine is red, it lasts longer than the roses and whites. The most volatile are the sparkling ones, which should be drunk practically on the same day the bottle is opened. The red wine can be kept open no more than a week or it will be completely spoiled, while the rose and white wine will only last 4 days or even less. The more fruity aromas the wine has, the more freshness it will lose.
How to slow down the wine oxidation process?
- In order to slow down this process, we must first cover the bottle again to prevent oxygen from entering continuously. If you do not keep your own cork, there are specialized accessories that hermetically seal the bottle or vacuum pumps which extract the air from the bottle extending the life of the open wine.
- Second, it is best to keep the bottle of wine in the fridge, because as with food, the cold helps to conserve wine and slow down its degradation. But remember that having the wine opened in the fridge only slows down the degradation but does not end its oxidation. The wine must be kept at a constant temperature between 53°F to 60°F.
- Third, unlike the recommendation to keep the bottles horizontal when they are not open, once uncovered you should place them vertically so that the oxygen is only in contact with the surface. The less the wine comes into contact with the air, the better.
