Potato Mixtureadd vegetables to a slow cooker

Potatoes, carrots, peppers, onions, and celery make a good combination. Once you have chosen the vegetables, wash, peel, and cut them into small cubes of about one inch. You should have 5 or 6 filled cups after cutting them. Put the vegetables in the slow cooker, add 2 tablespoons of water, 2 tablespoons of olive oil, 3 or 4 garlic cloves, salt, and pepper to taste. Stir and mix well. Cover the pot with the lid and cook for about 7 hours over low heat.

Roasted Vegetables (Spain)

Ingredients: 1 zucchini, 1 eggplant, 3 ripe tomatoes, 1 onion, a little of extra virgin olive oil, and salt to the taste.

In a frying pan with olive oil, sauté the chopped onion and tomato for a couple of minutes. Put that “sofrito” in the bottom of the pot and put the rest of the vegetables cut into thin slices until covering all the circumference of the slow cooker. Add salt and cook for 3 hours in high and one more hour with the lid removed.

Autumn Vegetable Stew

  • 1 sliced onionvegetable stew in a slow cooker
  • 2 chopped garlic cloves
  • 1 zucchini halved lengthwise and sliced
  • 2 cups of squash in cubes
  • 2 cups vegetable stock mixed with 2 tablespoons of flour
  • 19 oz. or 1 can white kidney beans
  • 2 diced tomatoes
  • fresh thyme leaves, cumin, salt, and pepper to taste
  • 2 tablespoons chopped fresh parsley

As easy as combining all ingredients, except parsley, in the slow cooker. Cover and cook on the low setting for about 7 or 8 hours. Last, stir in the parsley and serve
